Chocolate Hot Cross Bun Ice Cream Sandwiches Video Recipe by Love Cocoa

Delicious Chocolate Hot Cross Bun Ice Cream Sandwiches

Instructions

Makes: 6

Ingredients:
150ml almond milk, warmed (or cows milk)
7g sachet of yeast
3 tbsp brown or coconut sugar
255g plain flour
1 tsp mixed spice
1 tsp cinnamon
1/4 tsp salt
85g Love Cocoa Ecuador 70% Organic Dark Chocolate, finely chopped
4 tbsp vegan butter, melted – or you can use coconut oil

For the crosses:
Use melted Love Cocoa organic chocolate to create the crosses

Method:
Heat the milk until it’s slightly warm, but not too hot. Pour into a bowl and mix in the sugar and yeast. Leave to the side for 10 minutes to allow the yeast to grow.

In a larger bowl, mix together the flour, spices, salt and chopped chocolate.

Pour in the yeast mixture and melted butter. Mix until a dough forms and then kneed for a couple of minutes. Add more milk if needed.
Cover with cling film and a towel. Leave in a warm place for 1-2 hours to rise.
Once the dough has doubled in size, divide into 6 balls and arrange in a lightly oiled tin/baking dish. I used a loaf tin. Cover and leave to rise again for 20 minutes.

Preheat your oven to 190*C (170*C fan assisted) and bake for 25-30 minutes. Leave to cool completely before creating the crosses.
Use melted chocolate and a piping bag (or a spoon) to create the crosses.

To serve – Halve a hot cross bun and place a scoop of your favourite ice cream (we recommend chocolate!) on the bottom half then sandwich with the top half.

Take, for example, the postman who decided to fold an envelope so that he could get it into a London letterbox. Full marks for ingenuity but go to the back of the class for ignoring the fragile stickers on it. The envelope contained a vinyl record sent as a gift and you can imagine the state it was in by the time it was opened. Vinyl records generally don’t make great letterbox gifts.

And then there is chocolate…..

Posh Snickers Chocolate Bar – Video Recipe by Love Cocoa

 

VEGAN PROTEIN SNICKERS

 

Serves 14
Ingredients
  1. 55g oat flour
  2. 2 scoops vegan protein
  3. 1/4 tsp salt
  4. 6 tbsp natural peanut butter
  5. 110-120ml milk of choice
  6. 2 tbsp maple syrup
For the topping
  1. 3 tbsp peanut butter
  2. Handful of peanuts, chopped
  3. 170g Love Cocoa organic dark chocolate, melted
Instructions
  1. Add the first 3 ingredients to a bowl and mix. Fold in the peanut butter, milk and maple syrup.
  2. Press into a loaf tin covered with parchment paper (I used a 22x12cm loaf tin). Freeze for an hour.
  3. Spread 3 tbsp of peanut butter over the top and sprinkle chopped peanuts. Return to the freezer for another hour.
  4. Using a hot knife (pour hot water over the blade then dab it dry), slices into as many bars/pieces as you like. I sliced mine into 7 bars, but they were too big for a single serving so I would recommend slicing into 14 servings.
  5. Melt your Love Cocoa fairly traded dark chocolate and drizzle over the bars making sure they’re completely covered with the chocolate. Place on a plate or chopping board covered with parchment paper and freeze until the chocolate is set.
  6. Store in the fridge.
  7. Enjoy!

Chocolate Salted Caramel Crumpet – Video Recipe by Love Cocoa

Check out our latest recipe we made with Nadia’s Kitchen. These are seriously delicious,easy to make, and are free-from gluten and are suitable for vegans!

Ingredients:
100g Gluten-free Bread Flour*
5 tsp cocoa powder
¼ tsp baking powder
¼ tsp xanthan gum
¼ tsp salt
½ tsp fast action dried yeast
1 tbsp sugar (don’t use a sugar-free alternative as the yeast needs it to help the batter rise)
1 tbsp oil
250ml milk of choice, warmed
30g Love Cocoa sea salt dark chocolate

In a bowl, sift in the flour, cocoa, baking powder, xanthan gum and salt.
Add in the sugar and yeast. Mix to combine.
Pour in the oil and start adding in the warm milk slowly while mixing. Make sure there are no lumps of flour in the batter.
Cover with cling film and a towel. Leave to rise overnight in a warm place.
Heat a little bit of oil in a frying pan over a low/medium heat and lightly oil crumpet rings.
Place the crumpet rings in the pan and add about 2 tbsp of the batter into each of the rings. Cook for 10 minutes, flip and continue cooking for another 1 minute. Transfer onto a cooling rack.

For the salted caramel spread:
140g soft dates
4 tbsp almond butter (you can also use cashew butter)
50g Love Cocoa sea salt dark chocolate
65ml milk of choice

Blend all the ingredients together until smooth.

*If you don’t have a problem with gluten, you can substitute the gluten-free flour with plain flour and leave out the xanthan gum.

We recommend a South African Pinotage which was bred in 1925 as a cross between Pinot Noir and Cinsaut.
